Brown stew chicken gets its name and its color from the way it’s prepared. The chicken is browned in rich browning, which creates a thick gravy to which vegetables like carrots, garlic, and onions are added. Many cooks add scallions, tomatoes, and thyme to their pots as well. We add our own special ingredient to this dish as well!
Most times, the chicken is marinated overnight in a blend of spices. Then, it’s sautéed in oil until it’s nice and brown. In the same pot, we’ll add the vegetables, a little bit of water, and a healthy dose of garlic. As the chicken stews in that rich gravy, we’ll cook up a pot of rice and peas. Cooking time 2 hrs
Ingredients
· 1 whole chicken
· 1 onion
· 2 scallions
· 2 cloves of garlic
· 3 sprigs of thyme
· Tomatoes
· Pimento
· 1 Scotch Bonnet pepper
· Salt to taste
· 2 tablespoons of ketchup
· 2 cup of water
· Cooking oil
· Half all ingredients for seasoning
Directions
-Cut chicken and wash. Season with all ingredients except ketchup.
-Marinate overnight.
-Fry chicken until browned. Remove from pot.
-To the pot add the remaining veggies
-Add the rest of the seasoning along with ketchup and water.
-Let simmer for 15 minutes.
-Add chicken to pot and add extra seasoning if necessary and simmer for 30 minutes to an hour. You can thicken the gravy if you like
